Fava beans are part of the pulse family, including dried peas, edible beans, lentils, and chickpeas. They’re a historical source of protein in many parts of the world, especially in the Middle East, the Mediterranean and South America, traditionally used in soups and stews. They’ve recently gained popularity in the North American snack market.

Fava beans can fix upwards of 90% of their own nitrogen requirements, which means less industrial nitrogen fertilizer needs to be applied by farmers. Improving soil fertility reduces the use of chemical fertilizers for other crops on the farm. Lowering fertilizer requirements can give farmers a higher net return while producing less greenhouse gas emissions.

Once fava beans come off the field, they’re taken to Prairie Fava’s cleaning and processing facility. Focusing on the nutrition of the whole bean and the mindset that nothing goes to waste, we manufacture a variety of fava ingredients. Whole beans are dehulled to make splits. The creation of splits generates two co-products, hulls and grits. Grits are then ground into flour.

Fava beans are also contracted to be explicitly grown for Prairie Fava seed, then stored in preparation for next year’s season. All inputs go towards outputs, creating a vertically integrated operation.

Fava beans are an opportunity to make the most of each bean and the resources used in growing it: Isolate is an option, but fava is a very functional replacement that reduces both food waste and GHG emissions by also providing useful fiber and starch by-products.
